Black Rice Congee with Poached Chicken
Forbidden Foods Congee Recipe using Forbidden(R) Black Rice

Congees are traditionally a comfort meal much like a savoury porridge. We've taken this Asian classic and put our unique spin on it making it an exciting lunch or dinner experience. With exotic spices and complex flavours this is a dish to remember!

Serves: 1-2 | Prep Time: 15 mins | Cook Time: 30 mins


- 150g Forbidden® Black Rice
- 800g Of Water
- 10g Salt
- Quarter Cinnamon Stick
- 1 Star Anise
- 3 Cloves

- Chamomile Tea Bag
- 20g Ginger Fresh
- 20g Garlic
- 1 Chicken Breast
- 400ml Water
- 15ml Black Chinese Vinegar

- 30g Pickled Ginger
- Quarter Bunch Coriander
- 1 Stick Celery
- 20g Enoki Mushroom
- 1 Long Red Chilli

Preparation method:

  1. Boil the black rice in the salted water with the cinnamon sticks, star anise and cloves. Cook until the rice starts to break down into a porridge like consistency. It will need to be stirred regularly and may need to be topped up with water if it becomes too sticky.
  2. In a separate pot add the water, ginger, garlic, vinegar, chamomile tea bag and the chicken breast. Bring to boil so flavours infuse with the chicken.
  3. Bring to a light simmer and poach the chicken till it is cooked, approximately 10 mins, remove the heat and allow to cool in the liquid - set aside for later.
  4. Dice the celery finely and was it. Pick the coriander leaves to give it a shredded effect, Rinse and trim the mushrooms and finely slice the red chilli.
  5. To plate the congee, ladle a portion of the rice into a bowl. Finely slice the chicken breast and place the chicken breast on top. Arrange the coriander, chilli, pickled ginger and mushrooms on the top.
