Thai-Style P*rk Meatballs

We are sure you've never quite had p*rk meatballs like this! Inspired by the tastes of Thailand, we have created this fresh and flavoursome meatball dish. It can be a light starter or you can pair it with some other goodies and make a meal out of it. And the dipping sauce, is a must. So if you are missing a few ingredients, run down to the shops asap because you're gonna fall in love with this recipe.

Ingredients

  • 1 x Sensory Mill Plant-based P*rk Mix
  • 1 tablespoon vegetable oil, plus extra for cooking
  • large handful coriander, stalks and leaves finely chopped, plus extra leaves to serve
  • 2 cloves garlic, crushed
  • 2 tsp finely grated giner
  • 1 tsp brown sugar
  • 3 makrut lime leaves, finely shredded
  • 1 small red chilli, finely chopped, plus extra to serve
  • 2 tsp vegan fish sauce
  • lime wedges, to serve


    Dipping Sauce

    • 2 tbs caster sugar
    • 1 small red chilli, finely chopped
    • 1/2 small clove garlic, crushed
    • 2 tbs vegan fish sauce
    • 1 tbs lime juice
    • 1 tsp white vinegar 


    Method

    1. Combine all the dipping sauce ingredients in a jar and add 2 tablespoons water. Seal the lid and set aside while you make the meatballs, shaking occasionally to dissolve the sugar.

    2. Place the p*ork mix in a heatproof bowl. Add the oil and 1 cup (250ml) hot water and mix well. Leave to sit for 10 minutes.

    3. Stir in the coriander stalks and leaves, garlic, ginger, sugar, lime leaves, chilli and fish sauce. Season with pepper.

    4. Wet your hands with a little water to prevent the meatball mixture sticking.  Roll tablespoonfuls of the mixture into balls.

    5. Heat a drizzle of extra oil in a non-stick frying pan over medium heat. Cook the meatballs for 5–6 minutes, turning often until well browned all over and heated through.

    6. Serve meatballs scattered with extra chilli and coriander, with lime wedges and dipping sauce on the side.



      TIP:  You can substitute the vegan fish sauce with soy sauce if you like.

      TIP:  These meatballs are great to serve as a starter, or, for a meal, serve with stir-fried vegetables and steamed rice or rice vermicelli noodles.
